Promotrice di una viticoltura rispettosa dell’ambiente senza l’utilizzo di fitofarmaci, la Cantina Sociale di Trento ha avviato un progetto per la coltivazione di vitigni PIWI, resistenti alle malattie fungine, un passo in più verso la sostenibilità.
Intervista al direttore della Cantina Sociale di Trento Alfredo Albertini, riguardo le pratiche messe in campo per una viticoltura sostenibile. Una ricerca affinata nel corso degli anni che inizia in vigneto, con l’uso di varietà naturalmente resistenti PIWI, per approdare ad una produzione biologica certificata in bottiglia.
D: La CSTN è da sempre in prima linea nel favorire una viticoltura quanto più possibile eco-sostenibile. Ma secondo lei, Direttore Albertini, le varietà resistenti naturali possono davvero rappresentare il futuro della viticoltura?
R: “Difficile poter dire se queste tipologie di viti saranno il futuro, ma di certo mostrano quanto alta sia la sensibilità verso un modo di produrre più vicino alla naturalità. Di certo favoriscono il percorso agronomico verso un modello completamente bio. La nostra cantina ha messo in produzione circa 5 ettari di vigneti PIWI, in particolare Solaris, Bronner e Johanniter, coltivati in collina vicino alla città di Trento”.
D: Il vostro Santacolomba è un vino bianco da vitigni PIWI. Quali le caratteristiche?
R: È un vino ottenuto da una cuvée di Solaris e Bronner, due vitigni PIWI naturalmente resistenti alle malattie fungine, perciò coltivati senza l’utilizzo di fitofarmaci. Questi vigneti, dislocati in terreni vocati esposti a sud/sud-ovest, hanno una resa per ettaro di 90 q.li.
La raccolta, rigorosamente a mano, è intorno alla metà di settembre: quest’anno, complice il bel tempo ed uno stato fitosanitario eccellente delle uve, ci aspettiamo un’ottima vendemmia. Il mosto poi, separato dalle bucce, è posto a fermentare a temperatura controllata in recipienti di acciaio sino al termine della fermentazione alcolica. A seguire il raffreddamento che ne favorisce l’illimpidimento in maniera naturale. Anche il nome “Santacolomba”, che trae origine dall’omonimo lago di montagna, ha un significato per noi speciale, vuol essere un’idea di vino che rispetta la natura ed è uno dei vini che più ci rappresenta in questa evoluzione”.
D: Direttore, ci parli della nuova linea di vini biologici.
R: “Qui in Trentino la natura è più forte e quotidianamente presente. Di conseguenza oltre alla maggiore attenzione verso una sostenibilità del nostro esistere, che è un fatto crescente per molti, risulta spontaneo e sincero l’interesse di un gruppo di nostri soci vignaioli verso una produzione biologica. Un “credo”, che abbiamo messo in bottiglia per evidenziare la particolarità del progetto enologico. Al momento la gamma dei vini biologici che produciamo è composta da uno Chardonnay, un Muller Thurgau ed un Merlot, tutti e tre Doc Trentino”.
D: La produzione bio, si può quindi definire un progetto in via di sviluppo?
R: “In futuro la nostra produzione bio aumenterà, giacché proviene da un contenuto culturale proprio, oramai indipendentemente dalla domanda di mercato. Tra gli elementi che hanno favorito il cambiamento citiamo anche il protocollo di Produzione Integrata della Provincia di Trento, che da molti anni viene applicato in viticoltura, in anticipo ed avanguardia rispetto a molte altre zone produttive. Le norme del protocollo, infatti, prevedono un utilizzo responsabile e controllato dei prodotti fitosanitari, che periodicamente vengono scelti in funzione della loro efficacia, ma soprattutto posti in relazione al minore impatto possibile sull’ambiente e sull’uomo.Noi della Cantina Sociale di Trento abbiamo i vigneti che entrano in città e questo debbo dire ci ha particolarmente aiutato a capire e maturare le convinzioni di sostenibilità ambientale che oggi adottiamo”.
