A Vinitaly, Castello Banfi ha presentato il volume “La ricerca dell’eccellenza – Storia, sapere, sostenibilità”, una riedizione di una omonima pubblicazione del 2007. Il libro precedente, di 500 pagine, trattava in modo rigoso temi come la zonazione e la selezione clonale, in un linguaggio comprensibile a tutti gli appassionati. La nuova edizione, aggiornata e arricchita di nuove esperienze e scoperte scientifiche, è in un formato più fruibile e più agile, “una versione light” ma profonda ed esaustiva.
Il libro sintetizza il “sapere Banfi” in 95 pagine, si esprime, come ha detto il prof. Miele, in attività di ricerca, produttiva ed enologica, estremamente connesse con tutte le figure operative “fra chi lavora a livello economico, chi fa ricerca e chi lavora nel settore di trasformazione dell’uva in vino”, con l’obbiettivo di “di arrivare a versare nel bicchiere un vino che sia capace di generare emozioni piacevoli, uniche”. Nel volume si tratta un altro importante aspetto “il terroir che è particolare, un territorio fantastico” e quindi sono “da valutare con grande attenzione i criteri di sostenibilità …. tutto è rigorosamente studiato, dosato, pilotato, valutato nella consapevolezza di rispettare il terroir e il consumatore”.
Il libro si suddivide in quattro capitoli: inizia dalle “Risorse naturali e genetiche”, prosegue poi con l’evoluzione tecnologica in vigna, seguita dalla valorizzazione dell’uva, dalla vigna alla cantina e, infine, viene illustrata la sostenibilità aziendale. Nell’incontro, la parte agronomica è stata svolta dal Dott. Gianni Savelli, agronomo Banfi, che ha illustrato gli argomenti trattati dal libro quali la ricerca, l’innovazione e la sperimentazione in vigna. Interessante leggere il paragrafo dedicato alla forma di allevamento, l’alberello Banfi, che, a detta del Dott. Savelli, “sta dando grandi risultati qualitativi ed ecosostenibile” e “dà risultati in terreni che a metà degli anni 90 erano considerati terreni troppo difficile per la vite, terreni argillosi di origine marina, ricchi di sodio”. La parte dedicata alla valorizzazione dell’uva, dalla raccolta alla cantina, è stata illustrata da Dott. Pazzaglia, enologo Banfi. Il capitolo considera tre aspetti: la dimensione della bacca, marker qualitativa per Banfi, gli impianti di selezione ottica e densimetrica e il vinificatore Horizon.
Un inciso, il vinificatore Horizon, brevetto Banfi, è un serbatoio “costruito da una parte centrale in rovere e due parti in acciaio sopra e sotto per un’estrazione ottimale del colore e soprattutto la polimerizzazione tannini/antociani perfetta della varietà principe del nostro territorio: il Sangiovese”. Interessante è la parte del capitolo dedicata alla valutazione della dimensione della bacca, corredato di tavole illustranti i risultati. Un progetto di lavoro durato due anni che ha coinvolto il prof. Failla dell’Università di Milano e tesisti. Il volume si conclude con un pensiero al futuro dove Banfi declina il suo impegno e la sua missione che “è quella di soddisfare i clienti, nel rispetto delle risorse umane, ambientali e tecnologiche disponibili”. Il libro è “light” ma molto interessante e utile per capire quale è l’approccio, la mission e le prospettive di una azienda che è player mondiale nel settore.
