Il Vermentino sposa la grande cucina a Porto Venere. Giovedì 18 maggio alle 20:15 al Grand Hotel Portovenere la prima serata dedicata ai vini italiani, in collaborazione con gli assaggiatori dell’Onav. La degustazione, guidata dal delegato provinciale Francesco Petacco, si snoderà attraverso cinque Vermentini (quattro Colli di Luni e un Candia) molto differenti tra loro per vinificazione, i quali verranno degustati “alla cieca”, ossia con l’etichetta coperta.
L’evento è inserito nell’offerta del Palmaria Restaurant, che quest’anno ha avviato un nuovo format alla scoperta dei migliori vini italiani. Ogni mese, infatti, le scenografiche salette del Grand Hotel Portovenere, antico palazzo del XVI secolo affacciato sul mare, vengono aperte al pubblico, con degustazioni guidate delle più esclusive etichette, accompagnate a preparazioni culinarie in abbinamento. “Il Palmaria Restaurant ha nel proprio dna la promozione del territorio nella sua globalità – spiega Antonio Polesel, General Manager del Grand Hotel Portovenere – pensiamo che il nostro ristorante possa assolvere alla funzione di un vero e proprio laboratorio di cultura eno-gastronomica, capace di generare nuove idee e di attrarre esperienze diverse, nel solco della tradizione, ma con lo sguardo aperto verso l’orizzonte delineato dal nostro bellissimo mare”.
Il menù in abbinamento alle diverse tipologie di Vermentino prevede piatti della tradizione spezzina, seppur rivisitata: “Tentacoli di Polpo cotti a bassa temperatura, il suo brodetto, bruschetta e guanciale” e le “trofie artigianali con frutti di mare”. Un menù creativo, curato dallo Chef Francesco Parravicini, che dopo un lungo lavoro di ricerca e “scouting” dei migliori produttori locali, ha elaborato una serie di proposte stagionali a tema per promuovere proprio la cultura del territorio. “Il nostro know how nell’accoglienza internazionale ci ha permesso di mettere a fuoco le esigenze dei nostri clienti rispetto alla conoscenza del territorio e all’interscambio culturale – spiega Cristina Raso, responsabile comunicazione e progetti speciali per l’hotel – l’offerta gourmet del Palmaria si propone infatti come un luogo di approdo di diverse culture, coerentemente con il nostro ruolo di ambasciatori dell’accoglienza made in Italy”.
La stagione 2017 del Palmaria Restaurant vede diverse novità, tra cui l’aggiunta di menù vegetariano e l’inserimento di proposte gluten free; il tutto con preferenza per i prodotti biologici, il pescato a chilometro zero e le eccellenze delle regioni confinanti. L’Appennino Tosco Emiliano e l’entroterra ligure, con le loro perle gastronomiche, sono infatti tra le fonti d’ispirazione più intense, secondo una formula già testata con successo, per affascinare l’esigente clientela internazionale e spingerla ad esplorare il territorio.
