“La cuvée Extra Brut si distingue per un dosaggio minimo, che esalta tutta la purezza dei suoi aromi” dice Floriane Eznack, enologo della Jacquart. Con meno di 4 g/l di zucchero, l’Extra Brut è un vino di grandi ambizioni, nel suo assemblaggio, nella sua vinificazione e nel suo affinamento. La selezione delle sue uve predilige lo Chardonnay (35% – 40%) al Pinot Noir (30% – 35%) e al Pinot Meunier (25% – 30%). I 5 anni di invecchiamento in cantina procurano un bell’equilibrio fra maturità e freschezza. Jacquart Extra Brut ha bollicine finissime e aeree, e colore dorato e cristallino. Il primo naso rivela la purezza dei profumi di fiori bianchi (acacia), di gesso e di frutta (gelatina di mela cotogna). Note dolci e una punta di torrefazione si svelano poco a poco. In bocca l’attacco è franco, e lo sviluppo gustativo ha la cremosità e la mineralità di un vino cesellato.
Jacquart Extra Brut è un magnifico aperitivo, e si accosta perfettamente a un carpaccio di capesante, a una portata di sushi – makis ma anche a un piatto di formaggi stagionati (a pasta dura, Chaource o Langres de Champagne). “Un grande classico della cucina Bengali, il Johl, è un piatto molto aromatico, fatto tradizionalmente con verdure – dice il grande chef londinese Paul Dhayalan – Vi aggiungo cozze, gamberetti, orata, melanzane piccole e okra. Tutto questo dà una squisita portata di pesce e verdure, valorizzata dalla freschezza e dal fruttato della cuvée Jacquart Extra Brut”.
