Il Bardolino Chiaretto si è candidato a partner ideale della pizza d’autore, tant’è che fino a maggio il Consorzio di tutela bardolinese ha programmato un tour in alcune delle migliori pizzerie italiane, dalla Sicilia al Piemonte. L’abbinata pizza-Chiaretto verrà ribadita anche all’Anteprima dell’annata 2015 del classico rosé gardesano, che si presenterà al pubblico a Lazise, sulla riva veneta del lago d Garda, domenica 6 e lunedì 7 marzo insieme con il Lugana e con il Bardolino. A realizzare a Lazise la pizza per la stampa in arrivo da venticinque paesi del mondo sarà uno dei più noti pizzaioli napoletani, Giuseppe Pignalosa, patron della pizzeria Le Parùle di Ercolano, in piena area vesuviana.
È proprio il territorio del Vesuvio e la sua tradizione contadina quello che Giuseppe Pignalosa ama “raccontare” attraverso le sue pizze, utilizzando i prodotti dell’orto, resi ancora più saporiti dai suoli vulcanici di Ercolano, e seguendo il ciclo delle stagioni. Non è un caso che abbia voluto intitolare la sua pizzeria Le Parùle, che nella lingua napoletana significa “gli orti”. Grazie proprio al progetto volto a sostenere i contadini del territorio, Le Parùle è stata anche riconosciuta come “pizzeria dell’Alleanza” da parte di Slow Food.
Le pizze di Giuseppe Pignalosa seguono lo stile classico napoletano, ma questo creativo pizzaiolo ha voluto comunque adattare alla tradizione uno studio personale delle farine e della lievitazione che gli consente di ottenere una pasta di altissima qualità. La lunga e lenta lievitazione e maturazione della pasta raggiungono circa trenta ore ed unite ad una idratazione del 70% permettono di ottenere una pizza particolarmente soffice e digeribile.
A Lazise, in abbinamento con il Chiaretto, preparerà la Scarulella, una pizza sulla quale è protagonista la scarola, un’indivia tipica dell’area della provincia di Napoli e molto amata dai napoletani. Sulla pizza è proposta in maniera tradizionale, ovvero con olive nere del Vesuvio, capperi di Salina e fior di latte dei Monti Lattari. Ovviamente in abbinata col Chiaretto non mancherà poi il grande classico della pizza napoletana, ossia la Margherita, fatta con il pomodoro San Marzano e il fior di latte.
