Un confronto sui metodi alternativi di vinificazione e affinamento del vino e sette importanti master class: è un’offerta quanto mai ricca per gli appassionati di vino quella che Davide Paolini sta preparando per la quinta edizione di Milano Golosa, la manifestazione gastronomica in programma dal 15 al 17 ottobre a Palazzo del Ghiaccio.
Il momento di dibattito più atteso è certamente quello di lunedì 17 ottobre alle ore 11 con l’incontro dal titolo Pietra, vetro, porcellana: nuove vie per il vino? Tre produttori di frontiera porteranno le loro esperienze di vinificazione e affinamento in contentori diversi dal legno e dall’acciaio.
Ben
jamin Zidarich, vignaiolo del Carso, racconterà della tradizione millenaria di conservare vino e olio in vasi di pietra ricavata dalle cave della zona. Contenitori che ha ripensato per la vinificazione sulle bucce della Vitovska, grazie alla naturale capacità di controllare la temperatura della pietra. Stefano Amerighi porterà l’esperienza maturata sui Monti Sibillini ad Arquata del Tronto, oggi devastata dal terremoto, dove dal 2012 fa affinare il Pecorino in damigiane di vetro da 54 litri, un contenitore che definisce semplicemente “perfetto”. Con il piemontese Fabio Gea si potrà invece conoscere un percorso iniziato nel 2010 per la sperimentazione di innovativi contenitori vinari progettati ad hoc per le sue specifiche esigenze, realizzati in particolari ceramiche cotte ad alte temperature, come i grès e le porcellane. Al termine del dibattito si potranno degustare i vini affinati in pietra, vetro e ceramica.
Sette le degustazioni che animeranno i tre giorni di Milano Golosa 2016 con un calendario organizzato in collaborazione di WineMi, la rete che raggruppa 5 enoteche storiche milanesi, simbolo della cultura del bere bene meneghino: Enoteca Eno Club, Cantine Isola, La Cantina di Franco, Enoteca Ronchi, Radrizzani Drogheria Enoteca, in partnership con alcune importanti cantine italiane. Ci sarà quindi l’occasione per assaggiare le espressioni più significative della viticoltura nazionale con un’intensa incursione nello Champagne con la Maison Thiénot. Di calice in calice, si farà tappa nel Salento, nella Val d’Orcia, nella Valpolicella, nel Collio, nella Valtenesi, nel Pomino con Feudi San Marzano, Col d’Orcia, Marion, Jermann, Costaripa, Frescobaldi. Le degustazioni avranno una durata di circa un’ora e mezza e saranno guidate dagli esperti delle case vinicole in questione: non si tratterà di semplici introduzioni al vino, ma di veri e propri approfondimenti che avvicineranno i visitatori alle più pregiate etichette ed annate. Completa l’offerta enologica la presenza tra i banchi d’assaggio di numerose cantine di alto livello, provenienti da tutta Italia.
Milano Golosa sarà aperta al pubblico sabato 15 ottobre (dalle 13 alle 21), domenica 16 ottobre (dalle 10 alle 20) e lunedì 17 ottobre (dalle 10 alle 17). Tanti gli eventi che coinvolgeranno anche altri luoghi – ristoranti ed enoteche del centro – con il programma di Fuori Milano Golosa. Il biglietto d’ingresso, come nelle passate edizioni sarà di 10 euro a persona, 5 euro per i bambini dai 6 ai 12, bambini minori di 6 anni gratuito.
