Passerina e pecorino, vitigni dalle origini misteriose, probabilmente autoctoni del Piceno, a sud delle Marche, sono i veri protagonisti del rilancio del consumo del vino italiani.
Premiati dal mercato per le loro qualità organolettica e piacevolezza di beva, aggiungono un gran bel nome. Pur essendo un vitigno qualitativamente molto interessante, in passato ha sofferto per la concorrenza del trebbiano toscano, che ha rese superiori ed è decisamente più resistente e vigoroso. Proprio per questo motivo ha vissuto nell’ombra per molti decenni, fino a quando non è stato riscoperto da alcuni appassionati viticoltori. A sancire questo percorso di valorizzazione, nel 2011 è stata creata la DOCG Offida, che contempla nel disciplinare l’Offida Passerina DOCG, prodotto con una percentuale minima del vitigno dell’85%. È prodotta nelle versioni ferma, frizzante e passita e spumante, offrendo la base per cocktail dai nomi intriganti: Mélo day Passerina, Pésca la Passerina, Red Passerina. Un vino sicuramente molto trend! Il Pecorino, riscoperto negli anni Ottanta nei pressi di Arquata del Tronto da Teodoro Bugari (storico sommelier) e Guido Cocci Grifoni, ha trovato numerosi estimatori anche in Abruzzo e sulle colline di Offida. Vitigno semi-abbandonato perché poco produttivo, il pecorino predilige climi freschi senza disdegnare esposizioni a nord. Uva ricca di estratto e zuccheri, compensati da buona acidità, aromaticamente neutra, si giova della vinificazione in riduzione.

Fine, intenso, e fragrante, con ricordo di fiori d’acacia, piacevole ed elegantissimo, con profumi di frutta bianca e note di cedro. Gusto: fiori bianchi, delicate note di pomacee e vivaci sensazioni agrumate, accompagnano freschezza e sapidità, esaltate da uno stuzzicante petillant. Grande persistenza con gradevole corrispondenza gusto-olfattiva.

Chiudono il bouquet ricordi erbacei e accenni di salvia e timo, con suadente chiusura minerale. Gusto: al palato è potente grazie ad un ottima maturazione delle uve che ha consentito di realizzare un’ ideale connubio tra morbidezza e freschezza. Rotondo, ma allo stesso tempo sorprendente fresco e sapido. La grande struttura e la piacevole sapidità ne fanno un vino coinvolgente.
