Sono in aumento le cantine virtuose, che lavorano bene in vigneto e in cantina per lasciare una dote importante ai posteri: “vivere in un ambiente dove l’aria è pura come quella di un tempo e dove le viti esprimono il loro territorio attraverso un vino che parla e si racconta”.La filosofia della cantina Pizzolato di Villorba (Tv), si identifica nella libellula che sorvola i vigneti che è un indice di un ambiente pulito, privo di contaminazioni chimiche e ricco della sua naturale biodiversità.

“Dall’uva sana nasce un vino biologico che non ha bisogno di conservanti. Per questo la libellula è testimonial della linea biologica senza solfiti firmata – spiega Settimo Pizzolato. Perché vivere in un ecosistema naturale si può”. Cinque generazioni di storia e tradizione, un lungo impegno nella produzione enologica nel rispetto della naturalità e della massima qualità, un’azienda che realizza passo dopo passo la sua idea di futuro. Sono queste le salde radici della famiglia Pizzolato. Un percorso che ha inizio trentacinque anni fa quando, nel 1981, Settimo Pizzolato entra in azienda affiancando il padre Gino Pizzolato e progressivamente intraprende, tra i primi imprenditori enologici in Italia, la via del biologico. Con la volontà di mantenere in equilibrio l’ecosistema della campagna, organizzando al contempo la cantina per vinificare con rispetto l’uva proveniente dai filari, il produttore riesce ad ottenere, nel 1991, la certificazione ufficiale per i vini biologici. Oggi l’ ‘azienda taglia il traguardo delle 4 milioni di bottiglie prodotte all’anno. Di queste, 2 milioni sono di spumante. Il successo delle bollicine lo decretano i Paesi scandinavi, con l’ingresso nei mercati di Norvegia, Svezia e Finlandia. Il marchio Pizzolato è presente in 18 Paesi.

Vegano scelta o necessità?

I vini prodotti dalla Cantina Pizzolato sono, da sempre, vini vegani, in quanto prodotti senza elementi di origine animale, come la bentonite, un minerale argilloso che chiarifica il vino. Una scelta fatta da Settimo sin dall’inizio della sua attività, nel 1985, quando di prodotti vegani ancora non si parlava. Una strada presa, allora, allo scopo di mantenere la naturalità del vino e che oggi, finalmente, trova nella certificazione Vegan, ultima attestazione ricevuta in ordine di tempo, il giusto riconoscimento, a testimonianza dei tanti anni di lavoro verso una produzione interamente biologica e senza aggiunte di elementi estranei alla naturalità del vino. Negli ultimi anni sta crescendo il numero di vegani in Italia e questo richiede un progressivo adattamento di negozi, supermercati, ristoranti, ecc. a fornire prodotti che possano rispondere a questa filosofia di vita. Un’attenzione che la Cantina Pizzolato ha sempre avuto, senza rincorrere mode passeggere ma perseguendo un’idea di benessere a 360°. È importante precisare che il vino vegano, ed in generale il vino biologico, mantengono il gusto, l’aspetto, il sapore ed il grado alcolico del prodotto tradizionale. La differenza è solo nei procedimenti utilizzati per la produzione, tecniche che non vanno ad alterare in nessun modo la qualità e la tipicità del vino.

La nuova cantina Pizzolato: il bio prende forma

Da storia e tradizione è nata la visione del vino di Settimo Pizzolato. Una nuova sede, affiancata alla storica villa del 1500, simbolo dell’azienda, racconta visivamente la filosofia che dà vita a tutte le etichette di questa realtà trevigiana. Valori consolidati, che sono il punto di partenza per la nuova cantina, inaugurata ufficialmente il 29 maggio 2016 e che si propone come punto di ritrovo per la comunità del Trevigiano: un luogo dove la passione, le persone e i vini possono riunirsi in momenti di incontro e di piacere legati al frutto del lavoro dell’uomo. La nuova e moderna sede esalta l’importanza della storica villa: un grande edificio del Cinquecento, in perfetto stile Palladiano, rappresentato in numerose mappe di Villorba (TV), anche risalenti al 1680. La Casa Pizzolato è da sempre simbolo di ospitalità e di unione familiare, tanto da essere raffigurata nello stemma aziendale, raccontando l’origine di una storia che contribuisce alla crescita di un’intera società e ne consolida i principi fondanti.

Una cantina sempre in movimento, che si trasforma in un grande luogo di condivisione e di emozioni, attraverso serate, eventi ed attività rivolte a tutti: dagli enoappassionati, agli operatori del settore, per giungere perfino ai più piccoli. Il progetto è firmato da Made associati, studio di architettura e paesaggio degli architetti trevigiani Adriano Marangon e Michela De Poli. La presenza della Villa, residenza della proprietà, costituisce un elemento primario nella composizione degli elementi. Una passerella sospesa è inoltre il trait-d’union fra i vari livelli spaziali dell’architettura e tutte le fasi produttive, in un’ideale continuità, non solo visiva, del percorso che parte dal vigneto per arrivare al calice. L’edificio ha una “pelle” costituita da un rivestimento-filtro in listoni di legno posti in senso verticale, la cui ossidazione contribuirà, nel tempo, all’integrazione della struttura nel paesaggio, riprendendo le costruzioni rustiche tradizionali della campagna trevigiana. La cantina ha inoltre numerosi punti di contatto con l’esterno: alcune superfici in erba fanno da transizione tra la zona del parcheggio e l’edificio, mentre una piazzetta in legno dà continuità all’interno. Lo spazio esterno pavimentato viene usato in occasione di eventi e manifestazioni legate alle attività dell’azienda. Il legno utilizzato nell’intero progetto è il faggio prodotto da ITLAS, una bella realtà imprenditoriale della provincia di Treviso. Il legno, certificato Pefc, proviene solamente dalla Foresta controllata del Cansiglio attraverso un processo di selezione attuato in accordo con Veneto Agricoltura. Un prodotto locale, poiché la Foresta del Cansiglio è situata a soli venticinque chilometri dalla sede produttiva di Itlas; il faggio del Cansiglio possiede inoltre caratteristiche tecniche di robustezza e resistenza eccezionali, tanto da essere utilizzato fin dai tempi della Serenissima Repubblica di San Marco.
