Cresce la produzione vitivinicola “green” nelle Marche. Moncaro, la maggiore realtà produttiva della regione (928 viticoltori associati e 1.400 ha di vigneti coltivati con tecniche a basso impatto ambientale), potenzia il biologico con la riconversione di 175 ha di vigneti che si aggiungono ai 60 già certificati. La riconversione riguarda 45 ettari di vigneti nell’area del Conero e 130 in quella del Verdicchio dei Castelli di Jesi. E’ recente, inoltre, l’entrata in funzione del nuovo impianto fotovoltaico sulla sede di Montecarotto che garantirà oltre il 50% del fabbisogno energetico dell’azienda.
“Moncaro ha sempre svolto un ruolo da pioniere nella coltivazione biologica – spiega il Presidente Doriano Marchetti – la pratica del basso impatto ambientale, infatti, era già praticata dai nostri soci nel 1980, cioè da prima che esistesse una regolamentazione normativa del regime di coltura biologica. A questa scelta strategica abbiamo unito un importante investimento nel fotovoltaico, che ci ha portato a coprire una quota importante del nostro fabbisogno energetico. L’attenzione alla sostenibilità ambientale è andata di pari passo con la ricerca scientifica, che ci ha permesso di triplicare la produzione dei vini senza solfiti aggiunti”.
“Aderendo fin dall’inizio al progetto ideato da Riccardo Cotarella, enologo di fama internazionale sui vini senza solfiti aggiunti – spiega l’enologo di Moncaro Giuliano D’Ignazi – abbiamo ottenuto risultati estremamente positivi. Grazie alla ricerca è stata garantita la longevità e la qualità dei vini, tanto che, a seguito dell’adesione al progetto, stiamo estendendo la riduzione dei solfiti a tutta la gamma per garantire volontariamente una soglia inferiore al 50% del massimo consentito dalla legge”.
A livello organolettico la riduzione dell’utilizzo dei solfiti dona una maggiore espressività ai vini. Dal punto di vista olfattivo vengono esaltate le caratteristiche aromatiche più delicate, aspetto che la solforosa contribuisce a mascherare; mentre dal punto di vista del gusto vengono notevolmente attenuate le note amare del vino con il risultato di un maggiore equilibrio, in particolare sui bianchi.
