Sarà Francesco Brutto ad interpretare la cucina di Venissa. Lo chef coordinerà la brigata di giovani talenti che vivranno nove mesi nella Venezia Nativa.
Lo chef Francesco Brutto, premiato dalla Guida Espresso 2017, sarà a capo della cucina di Venissa per la stagione 2017. Francesco è già stato ai fornelli del ristorante stellato di Venissa nel 2014. Dopo quell’esperienza, il giovane chef, ha deciso di aprire il suo ristorante, Undicesimo Vineria a Treviso, in cui ha portato avanti una cucina molto coraggiosa, fino alla proclamazione di“Miglior Giovane Chef italiano 2017”.
Il giovane chef ritornerà quindi in Laguna, il progetto, nato dall’amicizia tra Matteo Bisol e Francesco, è ambizioso e coraggioso – “vogliamo portare in Laguna una cucina d’avanguardia – dice Matteo – Venissa deve diventare un riferimento nel panorama culinario. Anche il viaggio e il luogo unico dove si trova il nostro ristorante fanno parte dell’esperienza, vogliamo che il cliente si immerga nella Venezia Nativa, nei suoi profumi, per fargli vivere a pieno questo piccolo angolo di mondo.”
Venissa, anche quest’anno, sarà una fucina di giovani e promettenti cuochi, coordinati e ispirati dal talento di Francesco Brutto. Con lui collaboreranno: Chiara Pavan, executive chef che nel 2016 è stata sous chef al ristorante stellato Zum Lowen, Simone Selva (nel 2016 El Coq) e Francesca Regaiolo (nel 2016 Feva). Sarà una cucina molto legata al territorio della Laguna, diversa da quella che lo Chef continuerà a proporre nel suo ristorante trevigiano, scandita da una ricerca minuziosa e approfondita degli ingredienti del territorio e una grande attenzione alle erbe e al pescato locale.
Oltre al Ristorante stellato, Francesco interpreterà anche la cucina dell’Osteria Contemporanea di Venissa, creando un menù di incontro tra la tradizione lagunare e la sua idea di cucina.
