Una fuga dalla città per trovare benessere ed armonia a contatto con la natura, per assaporare vini e cibi di questa straordinaria terra di confine in cui si fondono tradizioni culinarie friulane, austriache e slave e per imparare i segreti di come cucinarli: a proporla è il Castello di Spessa Resort di Capriva del Friuli (Go).
Dormire fra le vigne
Al Castello di Spessa Resort gli ospiti dormono fra le vigne della tenuta di 25 ettari che lo circonda. Possono scegliere di alloggiare nel maniero o negli ex rustici, dove sono stati ricavati un piccolo albergo di charme, la Tavernetta al Castello, oppure negli appartamenti ricavati in un vecchio casale affacciato sul green del golf a 18 buche. Nei due ristoranti del Resort (la raffinata Tavernetta al Castello e la più rustica Hosteria del Castello) arrivano in tavola i prodotti dell’autunno e le ricette -tradizionali e no- che li interpretano: uva, zucca, oca, funghi, tartufo, oca sono i protagonisti di menu tematici, che accompagneranno gli ospiti fino all’inverno.
Il Menu della Sgualda e i corsi di cucina
Giacomo Casanova, che fu ospite del Castello nel 17, non mancò – da seduttore quale era - di farvi una conquista e sedusse Sgualda, giovanissima vedova al servizio del Conte Torriani, che descrisse nelle sue Memorie come “innamorata, e mite come un agnello, cosa che nelle contadine del Friuli è assai rara”. A lei e ai saporiti e genuini gusti della cucina contadina friulana, l’Hosteria del Castello dedica un gustoso menù di territorio, con piatti- simbolo quali il Frico (sorta di tortino di patate e formaggio friulano) e il Toc in braide accompagnato da crema di formaggi locali e salsiccia nostrana, un piatto semplice e gustoso che nasce nella tradizione con lo scopo di rendere la polenta quotidiana più saporita e corroborante. I segreti di questi piatti saranno svelati ai partecipanti dei Corsi di cucina che lo Chef Tonino Venica terrà da settembre a fine novembre: per piccoli gruppi, i corsi possono essere prenotati al momento dell’arrivo in Castello. Dureranno circa 4 ore e si concluderanno con una cena degustazione.
